Coconut Pumpkin Pie

Nothing is better than a homemade recipe, right? ๐Ÿ˜€Since we are in November already and thanksgiving is getting closer, I decided to give this following recipe a try before the actual dinner, just because I'm planning to do it again for that day.

I've never done a ๐ŸŽƒ Pumpkin Pie before, so I searched for the recipe online just to be sure of the ingredients and the steps on how to do it. However, I wanted to add something that would be different from the regular pumpkin pie. I thought of adding different things such as: Marshmallows, nuts, or even caramel. In the end, I thought of coconut, and I decided to add this extra ingredient to the recipe just to make it more my style.

In fact, It was such an easy procedure, and actually a good timing as well. I will give you the details down below, and I hope you can try this recipe and enjoy it as much as me and my family did๐Ÿ’–.

Ingredients (Serving for 8 people):

- 1 Can (15 oz) of Pumpkin (Libby's taste really good)
- 1 Can (14 oz) of Condensed Milk (Eagle Brand)
- 1/2 Spoon of ginger powder
- 1/2 Spoon of nutmeg powder
- 1/2 of salt
- 1 teaspoon of cinnamon powder
- 1 Unbaked pie crust
- 2 spoon of coconut flakes (Either sweetened or not)
- Whipped Cream
- 2 eggs


1) Start pre-heating the oven to 425 degrees F.

2) On a bowl, whisk the pumpkin, condense milk, spices, the 2 eggs and salt.

3) Once the mix is smooth, go ahead and pour it into the pie crust.

4) Bake for 15 minutes with the same temperature that you started with (425 degrees F).

5) After the 15 minutes, reduce the temperature to 350 degrees F, and continue baking for 35-40 minutes.

6) One trick to make sure that is ready is to insert a metal dinner knife in the middle of the pie about 1 inc deep. If it comes clean it's ready, otherwise keep baking for a couple more minutes.

7) When it's ready, leave it outside until cool down for 5 minutes. And add the whipped cream if you want to add it on the whole pie or by piece later on.

8) Add extra coconut flakes on the top.

9) Wait about 15 minutes to start serving or to save it on the refrigerator. AND ENJOY IT!
